South Omaha Mural Project

South Omaha Mural Project in the World Herald

Our South Omaha Mural project is drawing to close and coming out fantastic! Here it is featured in the Omaha World Herald. We are excited to see what other future projects we can participate in and bring to our community.

Here is a short portion of the article:

“A series of murals throughout South Omaha are capturing the area’s rich history of immigration, ranging from the early waves of Irish and Poles to more recent arrivals from Mexico and Central America.

The South Omaha Mural Project will consist of 10 community-based murals. Each work aims to depict the culture, history and ethnic heritage of groups that settled in South Omaha neighborhoods, said David Catalan, the former president of the South Omaha Business Association.

One of the sets that has been started is the Plaza De La Raza Mural Group, which shares the stories of people of Mexican, Salvadoran, Guatemalan and Honduran heritage living in South Omaha. Each culture will be depicted on one of four walls that border the Plaza de la Raza.

The Mexican Heritage Mural has been completed. It is the work of six local artists who listened to stories from Omaha’s Mexican community during months of meetings.”

New promise for Type 2 Diabetes

A new study on type 2 diabetes from Newcastle University suggest that people suffering from this disease could be cured if they lost weight. The following is a summary on the article:

“Scientists at Newcastle University have shown the disease is caused by fat accumulating in the pancreas. Losing less than one gram from the organ can reverse the life-limiting illness and restore insulin production.

Type 2 diabetes until now, was thought to be chronic. It can lead to blindness, stroke, kidney failure and limb amputation.

But now researchers at Newcastle have shown that the be reversed, even in obese people who have had the condition for a long time.

18 obese people with Type 2 diabetes who were given gastric band surgery and put on a restricted diet for eight weeks were cured of their condition. During the trial the patients, aged between 25 and 65, lost an average of 13 per cent of their body weight. Crucially they also lost 0.6 grams of fat from their pancreas, allowing the organ to secrete normal levels of insulin.

The team is now planning a larger two year study involving 200 people with Glasgow University to check that the findings can be replicated and weight loss can be sustained for two years.”

Cook rice with HALF the calories!

Rice with half the calories:

If you love rice but worry about your weight the good news is scientists have now discovered a way to reduce the caloric content of rice by over 50%, simply by the way it is cooked. According to recent scientific studies conducted in Sri Lanka if you want rice with HALF the calories try cooking it with coconut oil and refrigerating it overnight before eating.

  • Scientists say cooking the rice this way can cut the calories by up to 60%
  • The method increases the amount of resistant starch (RS) in the rice
  • RS is indigestible to the human body and so is not turned into sugar or fat

The key to cooking the rice is to first add a teaspoon of coconut oil to boiling water, then adding a half cup (105g) of rice, and then either simmering it for 40 minutes, or boiling it for 20 to 25 minutes. Then, they put the rice in the fridge for 12 hours to cool.

There is a warning however when it comes to reheating rice…Doctors warn that the reheated rice can be the cause of food poisoning. This isn’t as much about reheating as it is about the storage of the rice prior to being reheated.

Follow these tips to help serve rice safely:

  • Ideally serve the rice as soon as it has been cooked
  • If the rice can’t be served quickly then cool the rice as fast as possible (ideally within one hour)
  • Avoid keeping rice in the fridge for more than one day until reheating
  • When reheating any rice, always check that the dish is steaming hot all the way through
  • Do not reheat rice more than once
